Mountain Primal Protein Breakfast Muffins

Prep Time: 15 Minutes
Cook Time: 18 Minutes
Ingredients (Makes 12 Muffins):
  • (1) Pound American Berkshire Bacon, Breakfast Sausage, OR Chorizo Sausage
  • 12 Farm Eggs (beaten)
  • 2 Ounces of Your Favorite Green Chiles, Poblano Peppers, OR Bell Peppers
  • 1 Medium Red Onion (chopped)
  • Salt and Pepper (to taste)
PREP: Set your oven to 350 degrees and preheat while lightly oiling up your 6 or 12 muffin-cup-tin
STEP ONE: COOK THE MEAT
Brown your choice of Mountain Primal Breakfast Meat (sausage, chorizo, or bacon) in a large skillet (we prefer seasoned Cast Iron). Drain then keep your dirty paws out of it, it's for the muffins!!

STEP TW0: INGREDIENTS...UNITE!!!
Everybody in the pool! Combine the 12 beaten farm eggs, 2 ounces green chiles (or bell peppers), salt/pepper, and browned breakfast meat in a large mixing bowl and stir.

STEP THREE: BAKE IT UP
Pour a 1/4 cup of the muffin mix into each of the muffin-cups and place in preheated oven and bake for 18 minutes (or until eggs have set), remove from oven, and let cool for 5 minutes...if you can...

ENJOY!!

HINT: Work hard, eat well. We put in some crazy hours on the ranch and love these for a quick protein-packed (and DELICIOUS) breakfast to take with us on-the-go!
